Oatmeal Cream Pie Cookies recipe by Gayle Paradiso Davis

Ingredients
Cookies:
½ cup butter
½ cup shortening
¾ cup brown sugar
½ cup sugar
1 tbsp molasses
1 tsp vanilla extract
2 eggs
1 ½ cups flour
½ tsp salt
1 tsp baking soda
½ tsp cinnamon
1 ½ cups quick oats
Filling:
1 tbsp hot water
¼ tsp salt
1 jar (7 oz) marshmallow crème
½ cup shortening
2/3 cup powdered sugar
1 tsp vanilla extract

Directions
Cookies:
Preheat the oven to 350°F and prepare baking sheets.
In a bowl or standing mixer with a paddle attachment, cream the butter, shortening, brownsugar, sugar, molasses, vanillaextract, and eggs.
Combine the flour, salt, bakingsoda, and cinnamon in a separate bowl.
Gradually add the dry ingredients to the wet mixture, mixing well. Then, stir in the oats.
Drop teaspoonfuls of the dough onto the prepared baking sheets.
Bake for 10 to 12 minutes at 350°F.
Once baked, remove the cookies from the oven and let them cool for a few minutes on a wire baking rack to avoid burning the bottoms.
Filling:
Dissolve the salt in the hot water and set aside to cool.
Using a whisk attachment, combine the marshmallowcrème, shortening, powderedsugar, and vanillaextract until fluffy.
Add the cooled saltwater and mix well.
Spread the filling onto one side of the cookies, then top with another cookie to create a sandwich. For a cleaner look, use a piping bag to pipe a small circle of filling onto the cookie.

Athletics, which includes track & field, road running, and race walking events, is the area where Team USA succeeds the most. At the 2024 Paris Games alone, the United States took home 14 gold, 11 silver, and 9 bronze medals. The United States now has a total of 861 medals in athletics, nearly 4.5 times the number won by the second-place Soviet Union, which has 193 medals.
Heat the oil, cumin, and garlic in a small skillet over medium heat. Cook, stirring often, until fragrant and the garlic is lightly browned, about 3 to 4 minutes. Remove from heat and let cool for 5 minutes.
In a blender, combine the cooled oil mixture, 1/2 cup cilantro, limejuice, soysauce, chilepowder, 1 1/2 teaspoons salt, and honey. Process until smooth, about 30 seconds.
Reserve 1 tablespoon of the marinade. Place the skirt steak pieces in a large ziplock plastic freezer bag, pour in the remaining marinade, seal the bag, and shake to ensure the steak is evenly coated. Chill for 2 hours.
Preparing to Grill:
Remove the steaks from the marinade and place them on a rimmed baking sheet lined with paper towels. Do not rub off the excess marinade. Sprinkle both sides of the steaks with the remaining 3/4 teaspoon salt, and let them stand at room temperature while you preheat the grill.
Grilling:
Open the bottom vent of the grill completely. Light a charcoal chimney starter filled with natural lump charcoal (about 4 pounds). When the charcoal is covered with gray ash, pour it evenly onto the bottom grate of the grill. Place the top grill grate on the grill, close the lid, and preheat to high (450°F to 500°F).
Place the steaks on the oiled grill grate. Grill, uncovered, until charred and cooked to your desired degree of doneness, about 2 minutes per side for medium-rare.
Garnish and Serve:
Let the steak rest for 5 minutes on a cutting board with a juice channel. Slice the steak against the grain. Stir the board juices and the reserved 1 tablespoon marinade; drizzle over the sliced steak.
Sprinkle with the remaining 1/4 cup cilantro and serve with lime wedges and pico de Gallo.
Serve with warm tortillas and your favorite toppings.
In a saucepan, combine the grapejelly, chilisauce, and cayennepepper over medium-high heat. Stir well to mix.
Cook the sauce mixture for about 5-10 minutes and heat through.
Pour the frozen meatballs into a slow cooker.
Pour the heated sauce mixture over the meatballs.
Cover the slow cooker with the lid and cook on low for 3-4 hours, stirring occasionally, until the meatballs are heated through and the sauce has thickened.
Garnish the cocktail meatballs with basil leaves and serve warm as a yummy appetizer or main dish.
